Of all the vegetables to cross my cutting board/kitchen counter, the red onion is the most intensely regal. This is a serious vegetable with much mystery and character which can be peeled away layer by layer. If it had a voice it would be a rich clear baritone. The royal colored skin dominates it's place in the bowl and begs all to bow down to it.
